Sub-regions
I was wondering if there is a way to have something akin to a sub region in perch whereby more than one field appears when clicking on a region, instead of single text fields or text areas, web controls etc.

You can have as many fields as you like in the template that you select when setting up a region. It doesn't need to be a single field.
Take a look at the default template article.html as an example.
