Perch Shop - Take a deposit and a final payment at a later date

Is there a way Perch Shop could facilitate a payment solution where a customers books a trip and pays a 20% deposit to secure a booking, then at a later date they can pay their remaining balance?

You could possible do it as two products

  1. Deposit
  2. Balance

Tag the customer when the deposit is paid and only make the balance product viewable to those with the tag.
