Where do I find the form to edit the word email on the form. I don't want to change function just the word email to username.

check /perch/templates/members/forms/...
I must warn you, Members App uses multiple forms... registration, profile and maybe more, so this is not normally a single form edit your planning...
If you turn on debug you can see all the templates in use for that page.
