Is there a simple way of adding sections (with headers) to a gallery album?
For example, I have albums sorted by year, and within those years/albums I would like to group photos under different headings.

There's a few different ways you could approach it, depending on how you want to shape the editing experience.
Is the order of the images set? If so, the simplest method would be to add a field to the image template for a "heading before".
The 'image template' would be 'image.html' within the gallery templates, where the upload sizes are set? (I'm still getting a handle on the terminology sorry)
Yes, the proper terminology would be that
image.htmlis the "master template" for an image. i.e. it's the template that is used for editing an image, regardless of whatever templates are used to display the image later.
