Have reverted to previous app version, everything works better than it did before. Not sure what the problem was here but thanks for your help!

Ok. I think the issue could be your server's SSL certificates. The old version doesn't verify that they are valid when connecting.
Could it be a lack of SSL, as thats currently the case?
Not for your site itself - for the communication between your server and the MailChimp API. It's academic if you're using the old version now.
