Is it possible to add an image to an album?
This I mean, Under the "Album Options" where you enter a Album Title and Description I would like to be able to add an Overall image for the album.
Then clicking on the link will then allow me to view all the images in the album.

Yes, you can add any fields you need to the album by editing the
album.htmltemplate.So I can create a perch content field of type Image and this will appear in the back office to select an image as a album cover?
Is it like we add more fields to the paypal shop?

All Perch Apps behave the same way. Just add the fields that you want to the master template.
