Configure Redactor

I'm just wondering how I configure the toolbar in the Redactor plugin in Perch? I know this can be done through JS on regular pages but I'm not sure how to go about it with Perch.

Specifically I'm looking to add a tables button to the toolbar, as the default configuration doesn't support this.
