I saw the blurb about "Undo" but I'm wondering if Perch (Not Runway) has full version control. Can I restore content from x days ago or x iterations ago?

No, in Perch you can only step back one revision at a time using Undo.
Not sure if it offers the ability to restore, but this app may help you track down when changes were made so you have a better idea of how many versions you need to go back, etc
