Switched over to perch_shop_product() and changed all of the perch:content tags to perch:shop in my templates. All working now.

The example is good - it's just for the primary content functionality, nothing to do with Shop. Shop is an optional add-on.
This is why it's filed under "Working with Content".
I disagree. It explicitly mentions products, therefore confusion with the shop is inevitable.
