Perch Shop - process free products

Hi,

I have had a request from a client. They will have a site with products which they sell, however they will not be taking payments online, instead the order will be managed by a sales team. They would like customers to still be able to log in and view order history. Is there way using Perch shop to bypass the payment / checkout and have orders processed without payment?
