Populate form select field from dashboard

Hi there

I have an existing site with a contact form which includes a dropdown control. My client would like to be able to populate those dropdown options from within the dashboard. I can't quite get my head round how to go about this. Is there a way it can be done? I could be over-thinking things so fingers crossed for something I have missed!
