Ok to recap on your question what am I trying to do…
I'm trying to do pages in a more modular way, rather than each page having regions/fields just for that page I'm creating reusable templates (blocks) that can be used by the customer and reordered etc. So if they have a certain type of content then they just select a block and add the content (much like your Blocks video):

Heading and Text
Icon and paragraph
Two column text
Big image
Key features
Brand logos
There are always common patterns or types of content, so was trying to not reinvent the wheel each time. Some of this content may well be useful to use elsewhere on the site as custom content.
Doe that make sense, or would there be a better approach?
