Adding editable page Title tag to seo template?

Yes, Have you clicked on the "Page Details" tab for any page within the perch admin panel. This is where you would edit those details.

If you need to add more fields to this you would modify the attribute template located at /perch/templates/pages/attributes/default.html

If you would like to add it to your page attributes template, you could use:

<title><perch:pages id="pageTitle" label="Titel" type="textarea" size="xs" escape="true" count="chars" /></title>

If using the following, it is getting it from the "Page Details" as Robert was mentioning:
